OUR COMPANY: Where everything began..

In 2019, Chef Riccardo Alberti came up with the idea of launching Riccardo Cooking Class with the vision of creating a space for food lovers and travelers to learn the art of pasta making.

Inspired by his two “nonna” Lidia and Isabella (aka “Ninni”) and the culinary tradition and mastery of mom Giovanna, he decided to open the first LAB in Rome. His grandma Lidia offered him her loft with her loving kitchen and the first lab was born.

Quickly becoming a popular destination for tourists eager to experience Roman culinary traditions. Due to overwhelming demand, Riccardo expanded, opening a second lab next door.

Today, our two labs host thousands of guests from around the world, offering fun and accessible pasta-making lessons while also immersing them in Roman culture. Our passionate team of chefs not only teaches pasta techniques but also shares the rich customs of Rome—gestures included!

Since I was a kid, I have dreamed of becoming a Chef!

My mom and 2 grandmothers were asking for my help every time they needed to cook something and I believe that getting my hands dirty, ignited my passion and love for food. I give credits to them for my career and love that I have for my job.

I attended a culinary school, then experienced the challenges of working in restaurants, before going back to study and graduating in Food Science and Gastronomy. I’ve always been a dreamer, which is why I decided to open my Cooking labs and build a team of chefs that offer pasta lessons to thousands of students per year.

Besides food, I am passionate about wine and I attended and graduated from the Sommelier School.

If you join our classes, you won’t just learn how to make pasta – you’ll also gain the knowledge to taste and appreciate great wines.

My name is Guglielmo, I’m 26 years old, and I was born in Rome. My first memory related to cooking is when I used to cut tomatoes for the barbecue while my father was lighting the coals and my brother was helping with the meat.
I attended the Italian Culinary School Alma, where I learned the fundamental values and respect for cooking. I’ve had the opportunity to work in Michelin-starred restaurants and luxury hotels.

For the past year, together with Riccardo, I’ve been offering cooking classes, where I can share the simplicity and beauty of Roman cuisine while keeping the tradition of fresh pasta alive.
